  • cinnamon - 2 tsp
  • eggs - 4 item
  • granulated sugar - 2 c
  • salt - 1 tsp
  • butter - 1/4 lb
  • grated carrots - 3 c
  • baking powder - 2 tsp
  • baking soda - 2 tsp
  • chopped walnuts - 1 c
  • sifted flour - 3 c
  • salad oil
  • xxxx sugar - 1 lb
  • Add carrots

How to make carrot cake:

Blend oil and sugar. Add carrots. Add eggs, beaten in one at a time. Sift flour. Add baking soda, baking powder, salt and cinnamon. Add flour mixture to carrot mixture. Add nuts and mix well. Bake at 350° for 60 to 70 minutes. Makes 3 layers or 1 tube pan.Icing:1 (8 oz.) cream cheese1 lb. xxxx sugar1/4 lb. butter Combine and beat until smooth.
