  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 1 tsp
  • salt - 1 tsp
  • chopped nuts
  • flour - 2 c
  • soda - 2 tsp
  • stick butter - 1 item
  • salad oil
  • box powdered sugar - 1 lb
  • Add oil and blend
  • grated carrots, packed loosely - 3 c

How to make carrot cake:

Mix and sift dry ingredients in large bowl. Add oil and blend. Add eggs and beat well. Add grated carrots; stir and beat well. Bake in two 9-inch round cake pans at 350° for 35 minutes.Icing:1 (8 oz.) pkg. cream cheese1 stick butter1 lb. box powdered sugar1 tsp. vanilla1 1/2 c. chopped nuts Blend cream cheese and butter. Add powdered sugar, then add vanilla and nuts and mix well. Spread on cool cake.
