  • sugar - 2 c
  • cinnamon - 3 tsp
  • eggs - 3 item
  • vanilla - 2 tsp
  • salt - 1/2 tsp
  • chopped nuts - 1 c
  • flour - 3 c
  • stick margarine - 1/2 item
  • coconut - 1 c
  • soda - 2 tsp
  • can crushed pineapple, drained - 1 oz
  • salad oil
  • lemon extract - 1/2 tsp
  • box powdered sugar - 1 item
  • carrots, shredded or grated - 1 lb
  • Mix together salad oil and sugar

How to make carrot cake:

Sift together flour, soda, cinnamon and salt. Mix together salad oil and sugar. Add vanilla and eggs. Beat until blended. Add half of dry ingredients. Mix well and beat in carrots, pineapple, coconut and nuts. Add rest of dry ingredients and beat until well blended. Bake in angel food cake pan or 11 x 13 x 2-inch pan at 350° until brown and toothpick comes out clean when tested. Ice with Cream Cheese Icing.Cream Cheese Icing:1 large pkg. cream cheese (8 oz.)1/2 stick margarine1 box powdered sugar1/2 tsp. lemon extract1 tsp. vanilla Melt margarine and blend in with sugar, cream cheese and flavorings. Mix well. Ice top and sides if baked in tube pan or top only if baked in rectanglular pan.
