- sugar - 3 c
- vanilla - 1 Tbsp
- salt - 1 tsp
- chopped nuts
- flour - 3 c
- butter - 6 Tbsp
- coconut
- confectioners sugar
- eggs, beaten - 4 item
- baking soda - 1 Tbsp
- vegetable oil
- shredded carrot - 3 c
- drained, crushed pineapple - 3/4 c
- Grease a tube pan or two 9-inch layer cake pans
How to make carrot cake:
Preheat oven to 350°. Grease a tube pan or two 9-inch layer cake pans. Sift dry ingredients into a bowl. Add oil, eggs and vanilla. Beat well. Fold in nuts, carrots, coconut and pineapple. Bake in tube pan 1 hour or in layer cake pans 30 minutes.Frosting:8 oz. cream cheese6 Tbsp. butter1 tsp. vanilla1 1/2 c. confectioners sugar Beat together.Recipe categories: Desserts, Cakes, Carrots.
