  • vanilla - 1 Tbsp
  • salt - 1 tsp
  • chopped nuts
  • flour - 3 c
  • butter - 6 Tbsp
  • coconut
  • confectioners sugar
  • eggs, beaten - 4 item
  • baking soda - 1 Tbsp
  • vegetable oil
  • shredded carrot - 3 c
  • drained, crushed pineapple - 3/4 c
  • Grease a tube pan or two 9-inch layer cake pans

How to make carrot cake:

Preheat oven to 350°. Grease a tube pan or two 9-inch layer cake pans. Sift dry ingredients into a bowl. Add oil, eggs and vanilla. Beat well. Fold in nuts, carrots, coconut and pineapple. Bake in tube pan 1 hour or in layer cake pans 30 minutes.Frosting:8 oz. cream cheese6 Tbsp. butter1 tsp. vanilla1 1/2 c. confectioners sugar Beat together.
