  • cinnamon - 2 tsp
  • flour
  • nutmeg - 1 tsp
  • oil - 1 c
  • grated carrots - 3 c
  • eggs, beaten - 4 item
  • baking soda - 2 tsp
  • white sugar - 2 c
  • unsweetened applesauce
  • nuts and raisins optional - 1 item

How to make carrot cake:

Blend sugar, oil and eggs together until creamy. Sift together flour, soda, cinnamon and nutmeg. Add to sugar mixture; beat well. Add applesauce, grated carrots, nuts and raisins if you like. Blend well and pour into Bundt pan and bake at 350° until done. Spread with powdered sugar icing when cool.
