  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 1 tsp
  • pkg - 8 oz
  • salt - 1 tsp
  • chopped nuts - 1/2 c
  • flour - 2 c
  • soda
  • grated carrots - 2 c
  • baking powder - 2 tsp
  • cooking oil
  • sifted confectioners sugar - 1 lb
  • crushed pineapple, drained - 1 can
  • Add sugar, oil and eggs, mix well

How to make carrot cake:

Sift together first five ingredients. Add sugar, oil and eggs, mix well. Add carrots, drained pineapple and nuts. Turn into 3 greased and floured 9-inch layer pans or sheet pan. Bake at 350° for 35 to 40 minutes or until done. Cool full minute in pans, then turn out and cool on wire racks. Fill layers and spread top and sides with Cream cheese Frosting. Sprinkle chopped nuts on top.Cream Cheese Frosting:1/2 c. butter or margarine8 oz. pkg. cream cheese1 tsp. vanilla1 lb. sifted confectioners sugar Cream butter or margarine, cream cheese and vanilla. Beat in confectioners sugar. If too thick, add milk until mixture is of spreading consistency.
