  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 2 tsp
  • pkg - 1 oz
  • salt - 1 tsp
  • chopped nuts
  • oil
  • confectioners sugar
  • baking powder - 2 tsp
  • baking soda - 2 tsp
  • stick butter - 1/2 item
  • plain flour
  • small can crushed pineapple, well drained - 1 item
  • finely grated carrots - 3 c

How to make carrot cake:

Icing:1 pkg. confectioners sugar1 (8 oz.) pkg. cream cheese1/2 stick butter2 tsp. vanilla1 small can crushed pineapple, well drained Cream sugar and oil. Add eggs, one at a time. Sift flour, baking powder, baking soda, salt and cinnamon. Add to sugar and oil mixture. Fold in 1 cup chopped nuts and grated carrots. Bake in three 9-inch cake pans at 350° for 20 to 25 minutes.

Icing: Mix cream cheese and butter; add vanilla, sugar and crushed pineapple. Spread on each layer of cooled cake layers.
