Ingredients/Components
- sugar
- cinnamon - 2 tsp
- eggs - 4 item
- vanilla - 2 tsp
- pkg - 1 oz
- salt - 1 tsp
- chopped nuts
- oil
- confectioners sugar
- baking powder - 2 tsp
- baking soda - 2 tsp
- stick butter - 1/2 item
- plain flour
- small can crushed pineapple, well drained - 1 item
- finely grated carrots - 3 c
How to make carrot cake:
Icing:1 pkg. confectioners sugar1 (8 oz.) pkg. cream cheese1/2 stick butter2 tsp. vanilla1 small can crushed pineapple, well drained Cream sugar and oil. Add eggs, one at a time. Sift flour, baking powder, baking soda, salt and cinnamon. Add to sugar and oil mixture. Fold in 1 cup chopped nuts and grated carrots. Bake in three 9-inch cake pans at 350° for 20 to 25 minutes.Icing: Mix cream cheese and butter; add vanilla, sugar and crushed pineapple. Spread on each layer of cooled cake layers.
