  • sugar - 2 c
  • cinnamon - 2 tsp
  • cream cheese
  • eggs - 3 item
  • vanilla - 2 tsp
  • milk - 1/4 c
  • salt - 1 tsp
  • nutmeg - 1/4 tsp
  • oil
  • soda - 2 tsp
  • grated carrots - 2 c
  • confectioners sugar - 3 4
  • nuts - 1 c
  • plain flour
  • raisins - 1 c
  • allspice - 1/4 tsp
  • crushed pineapple and juice - 8 oz
  • flaky coconut - 2 c

How to make carrot cake:

Icing:8 to 12 oz. cream cheese3 to 4 c. confectioners sugar1/4 c. milk Mix first 4 ingredients; add dry ingredients which have been mixed together separately. Mix well. To this mixture, add carrots, coconut, pineapple, raisins and nuts, mixing well.

Turn into a greased and floured Bundt pan or 3 cake pans. Bake at 350° for 50 to 60 minutes.

Icing: Soften cream cheese and gradually add confectioners sugar. Add milk, if needed, a little at a time. Frost cake after it has cooled.
