Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- cream cheese
- eggs - 3 item
- vanilla - 2 tsp
- milk - 1/4 c
- salt - 1 tsp
- nutmeg - 1/4 tsp
- oil
- soda - 2 tsp
- grated carrots - 2 c
- confectioners sugar - 3 4
- nuts - 1 c
- plain flour
- raisins - 1 c
- allspice - 1/4 tsp
- crushed pineapple and juice - 8 oz
- flaky coconut - 2 c
How to make carrot cake:
Icing:8 to 12 oz. cream cheese3 to 4 c. confectioners sugar1/4 c. milk Mix first 4 ingredients; add dry ingredients which have been mixed together separately. Mix well. To this mixture, add carrots, coconut, pineapple, raisins and nuts, mixing well.Turn into a greased and floured Bundt pan or 3 cake pans. Bake at 350° for 50 to 60 minutes.
Icing: Soften cream cheese and gradually add confectioners sugar. Add milk, if needed, a little at a time. Frost cake after it has cooled.
