  • sugar - 3 c
  • cinnamon - 1 Tbsp
  • vanilla - 1 Tbsp
  • salt - 1/2 tsp
  • flour - 3 c
  • buttermilk - 1 c
  • baking soda - 1 Tbsp
  • large eggs - 5 item
  • walnut pieces
  • carrots, shredded - 3 c
  • can pineapple, drained - 1 item
  • sweetened coconut flaked - 5 oz

How to make carrot cake:

Heat oven to 325°. Grease a 13 x 9-inch baking pan. Beat together eggs, sugar, oil, buttermilk and vanilla on low speed. Beat in flour, baking soda, cinnamon and salt. Stir in remaining ingredients. Pour into pan. Bake 1 hour or until a pick inserted in middle comes out clean.
