Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 4 item
- vanilla - 1 tsp
- pkg - 1 oz
- salt - 1/2 tsp
- chopped nuts - 1 c
- soda - 2 tsp
- box confectioners sugar - 1 item
- salad oil
- carrots, shredded - 3 c
- plain flour, sifted - 2 c
- With mixer on low speed, mix well the eggs, oil and sugar; add carrots
How to make carrot cake:
Sift flour before measuring and combine with cinnamon, salt, soda and nuts and set aside. With mixer on low speed, mix well the eggs, oil and sugar; add carrots. Mix dry ingredients with batter. (Do not beat very much.) Grease and flour 3 round cake pans. Bake at 350° for 45 minutes. Cool before icing.Icing:1 stick butter1 box confectioners sugar1 (8 oz.) pkg. cream cheese1 tsp. vanilla Combine ingredients and mix well.
