  • eggs, beaten - 3 item
  • vegetable oil - 3/4 c
  • buttermilk - 3/4 c
  • sugar - 2 c
  • vanilla extract - 2 tsp
  • all-purpose flour - 2 c
  • baking soda - 2 tsp
  • salt - 1/2 tsp
  • crushed pineapple, undrained - 1 can
  • grated carrots - 2 c
  • raisins - 1 c
  • chopped nuts - 1 c
  • flaked coconut - 1 c
  • Combine flour, cinnamon, baking soda and salt; stir into egg mixture
  • 8 oz - 1 pkg
  • confectioners sugar - 1 box
  • heavy cream - 2 Tbsp

How to make carrot cake:

In a mixing bowl, combine eggs, oil, buttermilk, sugar and vanilla; mix well. Combine flour, cinnamon, baking soda and salt; stir into egg mixture. Stir in pineapple, carrots, raisins, nuts and coconut. Pour into a greased and floured 13 x 9 x 2-inch baking pan. Bake at 350° for 50 to 55 minutes, or until cake tests done. Do not overbake. Remove to a wire rack to cool.Cream Cheese Frosting:1/2 c. butter or margarine, softened1 pkg. (8 oz.) cream cheese, softened1 tsp. vanilla extract1 box (16 oz.) confectioners sugar2 Tbsp. heavy cream Combine ingredients; beat until creamy. Spread on cooled cake. Yields 12 to 16 servings.
