Ingredients/Components
- sugar - 2 c
- vanilla - 1/2 tsp
- salt - 1 tsp
- eggs, separated - 4 item
- nutmeg - 1 tsp
- baking powder
- powdered sugar - 1 c
- sifted flour - 2 c
- shredded carrots
- allspice - 1/2 tsp
- salad oil
- orange juice - 1 2
- Add oil, egg yolks and carrots
How to make carrot cake:
Sift dry ingredients in large bowl. Add oil, egg yolks and carrots. Mix well. Beat egg whites until stiff. Fold into first mixture. Pour into greased tube pan or spider pan. Bake at 325° for 1 1/2 to 1 3/4 hours in a tube pan or bake for 1 1/4 to 1 1/2 hours in spider pan. Add glaze to cake while it is hot.Glaze:4 oz. cream cheese1 c. powdered sugar1/2 tsp. vanilla1 to 2 Tbsp. orange juice Cream together and spread on warm cake.
