  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 1 tsp
  • salt - 1 tsp
  • flour - 2 c
  • coconut - 1 c
  • oil - 1/2 c
  • soda - 1 tsp
  • chopped walnuts - 1 c
  • stick butter or oleo - 1/2 item
  • finely chopped carrots - 2 c
  • Add dry ingredients
  • well-drained, crushed pineapple - 1 c

How to make carrot cake:

Beat sugar, oil and eggs until well mixed. Add dry ingredients. Bake in a greased and floured 9 x 13-inch pan at 350° for 1 hour or until done.Cream Cheese Frosting:4 oz. cream cheese, softened1/2 box powdered sugar (2 c.)1/2 stick butter or oleo1 tsp. vanilla Mix cream cheese and butter. Add vanilla, then add powdered sugar. Mix until smooth.
