Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- eggs - 4 item
- vanilla - 2 tsp
- salt - 1/2 tsp
- flour
- soda - 2 tsp
- vegetable oil - 1/2 c
- chopped nuts optional - 1 1
- dash of salt - 1 item
- margarine - 1 c
- shredded carrots - 3 c
- can crushed pineapple with juice - 1 oz
- box powdered sugar - 1 lb
- cube margarine - 1/2 item
- Combine sugar, margarine and oil in bowl; beat thoroughly, after each addition
How to make carrot cake:
Blend 2 cups flour, soda, cinnamon and salt; set aside. Combine sugar, margarine and oil in bowl; beat thoroughly, after each addition. Add dry ingredients alternately with pineapple (beginning and ending with flour). Add 1/4 cup flour with nuts and carrots. Fold this in last. Pour into greased and floured 9 x 13 x 2-inch cake pan. Bake in 350° oven for 40 to 45 minutes. Test to check if done. Cool cake and frost with frosting.Carrot Cake Frosting:1 (8 oz.) pkg. cream cheese1/2 cube margarine1 lb. box powdered sugar1 tsp. vanilla dash of salt Mix all ingredients together thoroughly and spread on cooled cake.Recipe categories: Desserts, Cakes, Carrots.
