  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 1 tsp
  • milk - 2 Tbsp
  • chopped nuts - 1/2 c
  • water - 1/2 c
  • oil - 1/3 c
  • firmly packed brown sugar - 1/2 c
  • powdered sugar
  • raisins - 1/2 c
  • cream cheese soft
  • Pillsbury Plus yellow cake mix - 1 pkg
  • firmly shredded carrots - 2 c

How to make carrot cake:

Glaze:1 c. powdered sugar1 1/2 oz. cream cheese (soft)2 Tbsp. milk1 tsp. vanilla Heat oven to 350°. Grease and flour pan. Blend cake mix, eggs, oil, water, brown sugar and cinnamon until moistened. Beat 2 minutes at high speed. Fold in shredded carrots, raisins and nuts. Spoon into pan. Bake at 350° for 50 to 60 minutes or until done. Cool upright for 25 minutes. Turn onto serving plate. Cool completely.

Blend glaze ingredients in small bowl until smooth. If needed, add a few more drops of milk for desired consistency. Refrigerate leftovers.
