  • sugar - 2 c
  • cinnamon - 1 tsp
  • eggs - 4 item
  • pkg - 8 oz
  • salt - 1/2 tsp
  • flour - 2 c
  • grated carrots - 2 c
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • raisins optional - 1 item
  • box confectioners sugar - 1 item
  • salad oil
  • walnuts optional - 1 c
  • Combine salad oil and sugar

How to make carrot cake:

Sift together the flour, baking powder, baking soda, salt and cinnamon. Combine salad oil and sugar. Mix well. Add eggs, one at a time, beating well. Add sifted ingredients and mix. Add carrots, nuts and raisins. Pour into two 8 x 8 x 2-inch or one 13 x 9-inch well-greased and floured pan. Bake at 350° for 35 to 45 minutes.Cream Cheese Frosting:1/2 stick margarine1 box confectioners sugar8 oz. pkg. cream cheese Combine all ingredients and mix well. Frost cooled cake.
