  • coconut - 1/2 c
  • raisins - 1/2 c
  • vanilla - 1 tsp
  • grated carrots - 2 c
  • crushed pineapple, drained - 1 (8
  • chopped nuts - 1 c
  • Pour into greased and floured tube pan
  • sour cream - 1/3 c
  • shortening - 1/4 c

How to make carrot cake:

Combine all ingredients and mix well. Pour into greased and floured tube pan. Bake for 1 hour at 350°. Stand 20 minutes before removing from pan. Frost when cooled.Sour Cream Frosting:2 1/2 c. confectioners sugar1/3 c. sour cream1/4 c. shortening3/4 tsp. vanilla1/8 tsp. salt Into small bowl, measure ingredients. Beat on low speed until mixed and then high until smooth and fluffy.
