Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- eggs - 3 item
- vanilla extract - 1 tsp
- salt - 1/2 tsp
- chopped nuts - 1 c
- confectioners sugar - 3 c
- baking powder - 1 tsp
- vegetable oil
- all-purpose flour - 2 c
- shredded coconut - 1 c
- margarine, softened - 6 Tbsp
- vanilla pudding mix - 1 pkg
- drained, crushed pineapple - 1 c
- fine grated carrots - 2 c
- Add oil, eggs, carrots and vanilla; beat until blended
How to make carrot cake:
In mixing bowl, combine dry ingredients. Add oil, eggs, carrots and vanilla; beat until blended. Stir in coconut, 1/2 cup nuts and pineapple. Pour into a greased 13 x 9 x 2-inch baking pan. Bake at 350° for 1 hour. While cake is baking, prepare iRecipe categories: Desserts, Cakes, Carrots.
