  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla extract - 1 tsp
  • salt - 1/2 tsp
  • chopped nuts - 1 c
  • confectioners sugar - 3 c
  • baking powder - 1 tsp
  • vegetable oil
  • all-purpose flour - 2 c
  • shredded coconut - 1 c
  • margarine, softened - 6 Tbsp
  • vanilla pudding mix - 1 pkg
  • drained, crushed pineapple - 1 c
  • fine grated carrots - 2 c
  • Add oil, eggs, carrots and vanilla; beat until blended
