Ingredients/Components

  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • chopped pecans - 1/2 c
  • salt - 1 tsp
  • vanilla flavoring - 1 tsp
  • oil - 1 c
  • soda - 2 tsp
  • sifted powdered sugar
  • plain flour - 2 c
  • cream cheese, softened - 6 oz
  • maple flavoring - 1 tsp
  • raw grated carrots - 4 c
  • Cream Cheese Frosting - 1 item
  • In large bowl, beat eggs; beat in oil

How to make carrot cake:

Mix flour, sugar, soda, salt and cinnamon. In large bowl, beat eggs; beat in oil. Gradually add flour mixture. Mix in carrots and nuts. Pour into greased and floured 9 x 13-inch rectangle pan. Bake in 350° oven for 50 to 60 minutes or pour into three 8-inch pans. Bake at 350° for 25 to 30 minutes. Cool and frost.Cream Cheese Frosting for Carrot Cake:4 Tbsp. softened margarine or butter6 oz. cream cheese, softened4 1/3 c. sifted powdered sugar1 tsp. vanilla flavoring1 tsp. maple flavoring Blend margarine or butter and cream cheese together. Gradually add sifted powdered sugar. Beat until smooth and creamy. Stir in vanilla and maple flavoring. Spread frosting on cooled cake. Garnish with crushed pecans, if desired.
