Ingredients/Components

  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 1 tsp
  • salt - 1 tsp
  • flour - 2 c
  • oil - 1 c
  • soda - 2 tsp
  • pecans - 1/2 c
  • oleo - 1/4 lb
  • shredded carrots - 3 c
  • box powdered sugar - 1 item
  • Beat in eggs, 1 at a time

How to make carrot cake:

Combine soda, flour, sugar, salt and oil. Beat in eggs, 1 at a time. Add carrots, vanilla and pecans. Pour into 2 greased 9-inch pans. Bake at 375° for 30 minutes. Cool and frost.

Note: Drained canned carrots may be used instead of fresh carrots. Drain and mash enough to make 3 cups.Frosting:1 (8 oz.) pkg. cream cheese1 box powdered sugar1/4 lb. oleo1 tsp. vanilla Mix ingredients given and blend.
