Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- eggs - 4 item
- vanilla - 1 tsp
- salt - 1 tsp
- flour - 2 c
- oil - 1 c
- soda - 2 tsp
- pecans - 1/2 c
- oleo - 1/4 lb
- shredded carrots - 3 c
- box powdered sugar - 1 item
- Beat in eggs, 1 at a time
How to make carrot cake:
Combine soda, flour, sugar, salt and oil. Beat in eggs, 1 at a time. Add carrots, vanilla and pecans. Pour into 2 greased 9-inch pans. Bake at 375° for 30 minutes. Cool and frost.Note: Drained canned carrots may be used instead of fresh carrots. Drain and mash enough to make 3 cups.Frosting:1 (8 oz.) pkg. cream cheese1 box powdered sugar1/4 lb. oleo1 tsp. vanilla Mix ingredients given and blend.
