Ingredients/Components

  • plain flour - 2 c
  • soda - 1 tsp
  • cinnamon - 2 tsp
  • sugar - 2 c
  • grated carrots - 2 c
  • lemon peel - 1 Tbsp
  • baking powder - 1 tsp
  • salt - 1/4 tsp
  • Crisco oil
  • eggs - 4 item
  • orange peel - 2 Tbsp
  • Icing:1 stick margarine
  • chopped nuts
  • vanilla - 2 tsp
  • cream cheese - 8 oz
  • powdered sugar - 1 lb

How to make carrot cake:

Icing:1 stick margarine1 1/2 c. chopped nuts2 tsp. vanilla8 oz. cream cheese1 lb. powdered sugar Mix dry ingredients together. Add oil, eggs and carrots. Pour into 2 (9-inch) cake or tube pans. Bake at 350° for 45 minutes.

For icing, cream the margarine with cream cheese; add powdered sugar and vanilla. Stir in nuts. Spread on cooled cake.
