Ingredients/Components

  • Wesson oil
  • sugar - 2 c
  • egg yolks - 4 item
  • water - 4 Tbsp
  • finely grated carrots
  • self-rising flour
  • cinnamon - 2 tsp
  • pecans, finely chopped - 2/3 c
  • Filling:1 large can milk
  • stick margarine - 1 item
  • vanilla - 1 tsp
  • chopped pecans - 1 c
  • can coconut - 1 item

How to make carrot cake:

Filling:1 large can milk3 egg yolks1 c. sugar1 stick margarine1 tsp. vanilla1 c. chopped pecans1 can coconut For cake, mix all ingredients, then fold in 4 stiffly beaten egg whites.

For filling, mix milk, butter, egg yolks and sugar. Cook until thick, over low heat. Let cool, then add vanilla, coconut and nuts.
