Ingredients/Components

  • cinnamon - 1 tsp
  • vanilla - 1 tsp
  • salt - 1/4 tsp
  • confectioners sugar - 1 lb
  • baking powder - 1 tsp
  • baking soda - 2 tsp
  • all-purpose flour - 2 c
  • grated carrot - 3 c
  • stick oleo - 1 item
  • Wesson oil
  • In a separate bowl, sift together next five ingredients, then add to carrot mixture

How to make carrot cake:

Mix together first three ingredients. In a separate bowl, sift together next five ingredients, then add to carrot mixture. Add four eggs one at a time. Pour into 2 greased cake pans and bake for 35 minutes at 350°.Icing:1 (8 oz.) pkg. cream cheese1 stick oleo1 lb. confectioners sugar1 tsp. vanilla Combine cream cheese, oleo and sugar; add vanilla. Sprinkle top of cake with chopped pecans.
