Ingredients/Components

  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 1 tsp
  • salt - 1 tsp
  • flour - 2 c
  • grated carrots - 3 c
  • baking powder - 2 tsp
  • baking soda - 1/2 tsp
  • vegetable oil
  • powdered sugar - 2 c
  • stick butter or margarine - 1 item
  • Add one egg at a time, beating after each

How to make carrot cake:

Mix oil and sugar. Add one egg at a time, beating after each. Add dry ingredients, then fold in carrots and nuts. Bake for 1 hour at 350°. Cool completely before frosting.Frosting:1 (8 oz.) pkg. cream cheese1 stick butter or margarine2 c. powdered sugar1 tsp. vanilla Cream together softened cream cheese and butter. Add vanilla. Beat until smooth. Frost cake when cool.
