Ingredients/Components
- flour - 2 c
- baking powder - 2 tsp
- baking soda
- cinnamon - 1 Tbsp
- salt - 1 tsp
- vegetable oil - 2/3 c
- sugar
- vanilla - 2 tsp
- large eggs - 4 item
- shredded carrots - 3 c
- can crushed pineapple, drained - 16 oz
How to make carrot cake:
Mix flour, baking powder, soda, cinnamon and salt. Set aside. Beat oil, sugar and vanilla in a large bowl with a mixer. Add eggs, one at a time, beating well after each. Gradually add flour mixture, beating just until smooth and well blended.With a wooden spoon, stir in carrots and pineapple until evenly blended. Pour into lightly greased and floured 9-inch tube pan. Bake at 350° for 50 to 60 minutes, until toothpick inserted comes out clean. Cool 10 minutes. Remove from pan and cool completely.
