Ingredients/Components

  • flour - 2 c
  • baking powder - 2 tsp
  • baking soda
  • cinnamon - 1 Tbsp
  • salt - 1 tsp
  • vegetable oil - 2/3 c
  • sugar
  • vanilla - 2 tsp
  • large eggs - 4 item
  • shredded carrots - 3 c
  • can crushed pineapple, drained - 16 oz

How to make carrot cake:

Mix flour, baking powder, soda, cinnamon and salt. Set aside. Beat oil, sugar and vanilla in a large bowl with a mixer. Add eggs, one at a time, beating well after each. Gradually add flour mixture, beating just until smooth and well blended.

With a wooden spoon, stir in carrots and pineapple until evenly blended. Pour into lightly greased and floured 9-inch tube pan. Bake at 350° for 50 to 60 minutes, until toothpick inserted comes out clean. Cool 10 minutes. Remove from pan and cool completely.
