Ingredients/Components

  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 2 tsp
  • pkg - 7 oz
  • salt - 1 tsp
  • chopped nuts - 1 c
  • flour - 2 c
  • oil
  • baking soda - 2 tsp
  • shredded carrots - 2 c
  • box powdered sugar - 1 lb
  • can crushed pineapple, undrained - 8 oz
  • stick margarine room temperature - 1 item
  • Add dry ingredients, mixing well

How to make carrot cake:

Cream sugar, eggs and oil. Add dry ingredients, mixing well. Add remaining ingredients. Pour into greased and floured jelly roll pan. Bake at 350° for 45 minutes. Cool. Frost with Cream Cheese Frosting.Cream Cheese Frosting:8 oz. pkg. cream cheese1 lb. box powdered sugar1 stick margarine (room temperature)1/2 tsp. vanilla Cream the margarine, cream cheese and vanilla. Gradually stir in the powdered sugar until creamy and smooth.
