Ingredients/Components

  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • salt - 1 tsp
  • grated carrots - 3 c
  • baking soda - 2 tsp
  • flour all-purpose - 2 c
  • oil Wesson or Crisco - 1 c

How to make carrot cake:

Cream together oil and sugar. Add eggs (one at a time). Sift together and add flour, soda, salt and cinnamon. Last, add carrots. Bake at 350° for 30 to 45 minutes. Makes a large cake or 2 (9-inch) layers.

This cake rises but will fall some while it cools. Tastes great. Use your favorite cream cheese icing.
