Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 4 item
- vanilla - 1 tsp
- pkg - 1 oz
- salt - 1/4 tsp
- baking powder - 1 tsp
- baking soda - 1 tsp
- nuts optional - 1/2 c
- salad oil
- finely grated raw carrots - 2 c
- powdered sugar approximately - 2 c
- flour heap a little
- Combine oil and sugar and mix well
How to make carrot cake:
Sift together first 5 ingredients. Combine oil and sugar and mix well. Add eggs (one at a time) to sugar and oil mixture; beat well. Add carrots and mix well. Add nuts. Bake at 350° for 50 minutes or until toothpick comes out clean.Icing:1/2 c. or less butter, softened1 (8 oz.) pkg. cream cheese1 tsp. vanilla1/8 tsp. salt2 c. powdered sugar (approximately) Combine butter and cream cheese until light.
