Ingredients/Components

  • sugar - 2 c
  • cinnamon - 1 tsp
  • eggs - 4 item
  • vanilla - 1 tsp
  • pkg - 1 oz
  • salt - 1/4 tsp
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • nuts optional - 1/2 c
  • salad oil
  • finely grated raw carrots - 2 c
  • powdered sugar approximately - 2 c
  • flour heap a little
  • Combine oil and sugar and mix well

How to make carrot cake:

Sift together first 5 ingredients. Combine oil and sugar and mix well. Add eggs (one at a time) to sugar and oil mixture; beat well. Add carrots and mix well. Add nuts. Bake at 350° for 50 minutes or until toothpick comes out clean.Icing:1/2 c. or less butter, softened1 (8 oz.) pkg. cream cheese1 tsp. vanilla1/8 tsp. salt2 c. powdered sugar (approximately) Combine butter and cream cheese until light. Add vanilla and salt. Gradually add powdered sugar until as stiff as you like.
