Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1 tsp
- baking powder - 1 tsp
- baking soda - 1 tsp
- applesauce - 3/4 c
- whole wheat flour - 1 c
- white flour - 1/2 c
- shredded raw carrots - 1 c
- shelled walnuts - 1/4 c
How to make carrot bread:
Preheat oven to 350°. Lightly coat a loaf pan with oleo or butter, then dust with flour. Mix sugar and applesauce in a bowl. Combine dry ingredients and add to applesauce mixture. Add carrots, vanilla and nuts. Beat in eggs, one at a time. Mix well. Pour into bread pan and bake for 50 minutes. Serve with soups, hearty salads and stews.
