Carrot bread
Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- eggs - 3 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- soda - 1 tsp
- baking powder - 1 tsp
- unsifted flour - 2 c
- chopped walnuts - 1 c
- raisins - 1 c
- salad oil - 1/2 c
- finely shredded carrots - 2 c
- packaged grated coconut - 2 c
How to make carrot bread:
In a large bowl, beat eggs until light. Stir in vanilla and salad oil. Add carrots, coconut, raisins and nuts. Mix well until blended. Combine the flour, salt, soda, baking powder, cinnamon and sugar. Sift into the first mixture. Stir just until well blended. Spoon into a 9 x 5-inch loaf pan that has been well buttered and dusted with flour. Bake at 350° for about 1 hour or until it tests done. Remove from pan and cool completely. Its flavor and texture improve if wrapped and refrigerated for several days. Yields 1 loaf.Recipe categories: Breads, Vegetables, Carrots.
