Ingredients/Components

  • salt - 1/4 tsp
  • flour - 1 c
  • brown sugar - 2 tsp
  • baking soda - 1 tsp
  • egg - 1 item
  • pumpkin pie spice - 1/2 tsp
  • nuts optional - 1/2 c
  • shredded carrots - 2 3
  • lemon juice - 2 Tbsp
  • honey - 1/2 c
  • skim milk - 3/4 c
  • olive oil - 2 Tbsp
  • unprocessed bran - 1 c
  • dates, chopped or 1 c - 8 oz

How to make carrot bran muffins:

Preheat oven to 400°. Grease 12 muffin cups. In large bowl, combine carrots, bran, honey, milk, oil, lemon juice, egg, dates or raisins and nuts, if desired. Let mixture stand for 5 minutes. In a medium bowl mix together flour, sugar, baking soda, pumpkin pie spice and salt. Combine dry ingredients into wet ingredients and stir just until moistened. Bake for 15 to 20 minutes.
