Caribbean fudge pie
Ingredients/Components
- eggs - 3 item
- pkg - 1 oz
- butter or margarine - 1/4 c
- unbaked 9-inch pastry shell - 1 item
- all-purpose flour - 1/4 c
- instant coffee - 2 tsp
- brown sugar, firmly packed - 3/4 c
- whipped cream optional - 1 item
- almond or rum extract - 1 tsp
- chopped pecans divided
How to make caribbean fudge pie:
Cream butter and sugar; add eggs, one at a time, beating well after each addition. Add melted chocolate, coffee, and almond or rum extract. Stir in flour and 1 cup of pecans. Pour into pastry shell; sprinkle with remaining pecans. Bake at 375° for 25 minutes or until done. Cool; top with whipped cream if desired.
