Ingredients/Components

  • eggs - 3 item
  • pkg - 1 oz
  • butter or margarine - 1/4 c
  • unbaked 9-inch pastry shell - 1 item
  • all-purpose flour - 1/4 c
  • instant coffee - 2 tsp
  • brown sugar, firmly packed - 3/4 c
  • whipped cream optional - 1 item
  • almond or rum extract - 1 tsp
  • chopped pecans divided

How to make caribbean fudge pie:

Cream butter and sugar; add eggs, one at a time, beating well after each addition. Add melted chocolate, coffee, and almond or rum extract. Stir in flour and 1 cup of pecans. Pour into pastry shell; sprinkle with remaining pecans. Bake at 375° for 25 minutes or until done. Cool; top with whipped cream if desired. Yields one 9-inch pie.
