  • cream cheese - 1 (8
  • milk - 2 c
  • tub Cool Whip - 1 item
  • box yellow/white cake mix - 1 item
  • can crushed pineapple I use 20 oz - 1 oz
  • box vanilla instant pudding regular size, not jumbo - 1 item
  • chopped nuts/coconut, if desired - 1 item

How to make caribbean delight:

Baking Temperature: 350°. Baking Time: 30 to 35 minutes.

Mix cake mix in bowl using pineapple juice from crushed pineapple instead of water called for in mix. (My sister uses Jiffy cake mix, I use 2 boxes of Washington cake mix.) Grease bottom and sides of 9 x 13-inch pan and bake. Let cool.

Mix together milk, instant pudding and cream cheese until thick. When cake is cool, spread mixture on top of cake and top with crushed pineapple. Top with Cool Whip and garnish with coconut and chopped nuts, if desired. Refrigerate at least one hour before serving. It is best refrigerated overnight or longer. For added moistness in cake, poke a few holes in cake before you spread the cream mixture. Is a great summertime dessert.
