Caramel popcorn
Ingredients/Components
- salt - 1 tsp
- baking soda - 1/2 tsp
- margarine - 1 c
- light corn syrup - 1/2 c
- popped corn - 5 qt
- brown sugar, firmly packed - 2 c
How to make caramel popcorn:
Spread freshly popped corn in a large, shallow sheet pan. Place in 250° oven to keep warm and crisp. Combine butter, brown sugar, corn syrup and salt in a 2-quart heavy pan. Place on medium heat and stir until sugar dissolves. Continue to boil until firm ball stage (248°), about 5 minutes. Remove from heat. Stir in baking soda. Syrup will foam. Pour hot syrup over popped corn in a fine stream. Stir to mix well. Return to oven for 50 minutes, stirring every 15 minutes.
