Caramel apple coffee cake
Ingredients/Components
- sugar - 2 c
- eggs - 3 item
- vanilla - 2 tsp
- packed brown sugar - 1 c
- milk - 1/4 c
- butter or margarine
- salt - 1 tsp
- baking soda - 1 tsp
- pinch of salt - 1 item
- vegetable oil
- all-purpose flour - 3 c
- coarsely chopped pecans - 1 c
- chopped and peeled apples - 3 c
How to make caramel apple coffee cake:
Topping:1/2 c. butter or margarine1 c. packed brown sugar1/4 c. milk pinch of salt In a mixing bowl, beat the eggs until foamy. Gradually add sugar. Blend in oil and vanilla. Combine flour, salt and baking soda; add to egg mixture. Stir in apples and pecans. Pour into a greased 10-inch tube pan; bake at 350° for 1 hour and 15 minutes, or until the cake tests done. Cool in pan on a wire rack for 10 minutes. Remove cake to a serving platter.Topping: Combine all ingredients in a saucepan; boil for 3 minutes, stirring constantly. Slowly pour over warm cake (some topping will run down onto the serving plate). Yields 12 to 16 servings.
