Ingredients/Components
- eggs - 3 item
- oil vegetable oil - 1 c
- sugar - 2 c
- vanilla - 3 tsp
- cantaloupe, pureed - 2 c
- flour - 3 c
- salt - 1 tsp
- soda - 1 tsp
- baking powder - 3/4 tsp
- cinnamon - 2 tsp
- ginger - 1/2 tsp
- chopped nuts - 1 c
How to make cantaloupe bread:
Beat eggs. Add oil, sugar and vanilla. Cut melon into small pieces and puree. Add to egg mixture. Sift in dry ingredients; add to liquid. Pour into 2 greased and floured 9 x 5-inch loaf pans. (I used 3 smaller pans.) Bake at 325° for 1 hour, or test for doneness. May be frosted.Recipe categories: Breads, Breakfast, Quick breads.
