  • eggs - 3 item
  • oil vegetable oil - 1 c
  • sugar - 2 c
  • vanilla - 3 tsp
  • cantaloupe, pureed - 2 c
  • flour - 3 c
  • salt - 1 tsp
  • soda - 1 tsp
  • baking powder - 3/4 tsp
  • cinnamon - 2 tsp
  • ginger - 1/2 tsp
  • chopped nuts - 1 c

How to make cantaloupe bread:

Beat eggs. Add oil, sugar and vanilla. Cut melon into small pieces and puree. Add to egg mixture. Sift in dry ingredients; add to liquid. Pour into 2 greased and floured 9 x 5-inch loaf pans. (I used 3 smaller pans.) Bake at 325° for 1 hour, or test for doneness. May be frosted.
