Ingredients/Components
- salt
- brown sugar - 1/2 c
- cider vinegar - 3 Tbsp
- cloves - 1/4 tsp
- light molasses - 1/4 c
- ground cinnamon - 1/4 tsp
- dry mustard - 3 tsp
- pepper - 1/2 tsp
- catsup - 3/4 c
- medium onions, quartered - 3 item
- piece salt pork - 1/4 lb
- pea or navy beans
How to make camp beans:
Wash, cover beans with 5 cups of water. Soak 8 hours or overnight. Then add 2 cups water, mustard, pepper and next 8 ingredients. Boil, covered, about 1 hour or until skins of beans begin to wrinkle.Heat oven to 250°. Cut salt pork in 1-inch cubes. Place in bean pot, cover with hot beans and liquid. Generously sprinkle with pepper. Bake 6 to 8 hours covered or until tender. When beans are half baked, add about 3/4 cup water or enough just to cover. Bake uncovered for the last half hour.
