Ingredients/Components

  • sugar - 2 Tbsp
  • salt - 1 tsp
  • brown sugar - 1/2 c
  • cornstarch - 1 Tbsp
  • oil - 1 Tbsp
  • vinegar - 2 Tbsp
  • salad oil - 1 Tbsp
  • pepper - 1/8 tsp
  • chopped onion - 1/2 c
  • soy sauce - 2 Tbsp
  • catsup - 1/2 c
  • white wine vinegar - 1 Tbsp
  • chicken broth - 3 Tbsp
  • mustard - 1 Tbsp
  • hamburger - 1 lb
  • dry sherry - 1 Tbsp
  • can garbanzo beans, drained - 1 item
  • can lima beans, drained - 1 item
  • large can pork and beans - 1 item
  • can kidney beans, washed - 1 item
  • bacon, diced and sauteed - 1/4 lb
  • chicken breast, beef or seafood any one

How to make calico beans:

Cut meat into bite size pieces and place in bowl. Marinate in 1 tablespoon dry sherry, 1 tablespoon cornstarch, salt, pepper and 1 tablespoon salad oil. Stir to coat and marinate at least 15 minutes.

Mix and stir 2 tablespoons soy sauce, white wine vinegar, 1 tablespoon dry sherry, chicken broth, sugar and 2 tablespoons cornstarch.

Cut up any of the following vegetables: onions, green peppers, broccoli, zucchini, carrots, pea pods and celery.

In hot pan, add 1 tablespoon oil and fry 4 to 6 small dried whole red hot chilies* (the more you use the hotter it will be, but don't use less than 4) and salted peanuts.

Remove from pan after cooked, then add the veggies. Cook until done. Then cook the meat. Then combine all ingredients, heating thoroughly. Serve over rice.

*Major Note: Watch the chilies as they cook. If they burn, they will release potent volatile oils that sting the nose and eyes and makes the dish very hot.
