Cajun rice casserole
Ingredients/Components
- salt - 1 item
- pepper - 1 item
- garlic salt - 1 tsp
- onion salt - 1 tsp
- dried parsley flakes - 3 Tbsp
- rice - 1 item
- bacon - 1/2 lb
- large onion - 1 item
- can Ro-Tel tomatoes and green chilies - 1 oz
- cans tomatoes with juice - 2 oz
- okra, trimmed and cut into small pieces - 1/2 lb
How to make cajun rice casserole:
Fry bacon in skillet and drain. Cool; crumble into small pieces. Saute onion in bacon grease until golden. Add garlic salt, onion salt, okra, tomatoes, Ro-Tel, parsley flakes, salt and pepper. Mix well. Simmer uncovered 1 1/2 hours. Meanwhile, prepare rice according to package directions. Serve cooked mixture over rice. Top with crumbled bacon.
