  • salt - 1/2 tsp
  • eggs, beaten - 4 item
  • whipping cream - 1 c
  • green onions, finely chopped - 2 item
  • cayenne pepper - 1/8 tsp
  • Swiss cheese, grated - 1 c
  • 10-inch deep dish pie shell
  • cooked, peeled shrimp or crawfish, slightly chopped - 1/2 lb
  • small can crabmeat, drained - 1 item

How to make cajun quiche:

Sprinkle cheese evenly over unbaked pie shell. Add chopped shrimp and crabmeat. Then add green onions. Mix eggs, whipping cream, salt and pepper. Pour over shrimp. Preheat oven to 400°. Place pie on cookie sheet and bake 40 minutes. Let stand a few minutes if not completely "set" in center.
