Cajun dirty rice
Ingredients/Components
- water - 4 c
- oil - 2 c
- all-purpose flour - 2 c
- salt and pepper to taste - 1 item
- large chopped onion - 1 item
- chopped bell pepper - 1 item
- each: ground beef, ground turkey and ground pork - 1 lb
- each: chopped fresh parsley and green onion - 2 c
- raw regular rice, cooked - 8 10
- garlic head, peeled and chopped - 1 item
How to make cajun dirty rice:
Add onion, bell pepper and garlic to roux; stir, then put in large pot. Stir in water. Add meats and stir. Cook 1 1/2 hours over low heat, stirring occasionally. Stir in parsley, then green onion. Add cooked rice to meat mixture, a little at a time. Mix well until all rice is added. Eat hot or cold. Freezes well. Makes 12 to 14 servings.Recipe categories: Side dish, Southern u.s., Cajun.
