Cajun cake



  • sugar
  • chopped pecans - 1 c
  • evaporated milk
  • coconut - 1 c
  • large eggs - 2 item
  • stick butter - 1 item
  • self-rising flour
  • crushed pineapple undrained

How to make cajun cake:

Icing:1 c. evaporated milk1 c. sugar1 stick butter1 c. coconut1 c. chopped pecans Measure all cake ingredients in a large bowl. Mix until well blended. Pour into a well greased 8 x 12-inch pan. Bake at 350° for 30 minutes. Cool in pan.

Icing: Heat sugar, butter and milk to boiling. Stir once; boil for 7 minutes. Add coconut and pecans. Remove from heat. Beat until thick and cool. Pour icing over the cake that is still in the pan, to make the cake moist. Store tightly covered.
