Ingredients/Components
- sugar - 1 c
- eggs - 2 item
- vanilla - 1 tsp
- chopped pecans - 1 c
- flour - 2 c
- coconut - 1 c
- soda
- pinch of salt - 1 item
- small can Pet milk - 1 item
- can crushed pineapple with juice - 1 oz
- Icing:1 stick oleo
How to make cajun cake:
Icing:1 stick oleo1 small can Pet milk1 c. sugar1 c. chopped pecans1 c. coconut1 tsp. vanilla Beat first 5 ingredients by hand 1 minute. Grease or spray a 9 x 13 pan, but do not flour. Bake at 300° for 40 to 45 minutes.Icing: Mix and boil oleo, milk and sugar about 5 to 6 minutes. Add pecans, coconut and vanilla. Spread on warm cake.
