  • margarine, melted - 4 Tbsp
  • oregano - 1/8 tsp
  • white pepper - 1/2 tsp
  • black pepper - 1/2 tsp
  • cayenne pepper - 1/2 tsp
  • thyme - 1/8 tsp
  • onion powder - 1/2 tsp
  • fish fillets - 4 item

How to make cajun blackened fish:

Spread melted margarine over fillets. Combine all spices and mix well. Rub spices into fish. Heat cast-iron skillet until very hot; watch carefully. Cook fillets for about 3 minutes on each side, depending on thickness. (Caution: Cook outside or in very well ventilated area.)
