- butter or margarine, melted - 1/4 c
- cornmeal - 2 c
- pepper - 1 Tbsp
- seasoned salt - 1 2
- Cajun seasoning - 2 Tbsp
- lemon wedges for garnish - 1 item
- each catfish fillets - 8 (3
How to make cajun baked catfish:
Combine first 3 ingredients. Dredge fillets in mixture. Place skin side down on greased baking sheet. Combine Cajun seasoning and seasoned salt. Sprinkle over the fillets. Drizzle with butter. Bake at 400° for 30 minutes or until golden and fish flakes. Garnish with lemon wedges on plates to serve. Serves 4.
