Caesar salad
Ingredients/Components
- red wine vinegar - 1/4 c
- Dijon mustard - 1 Tbsp
- olive oil - 3/4 c
- freshly grated Parmesan cheese - 1 c
- croutons - 1 item
- minced garlic - 2 tsp
- fresh lemon juice - 1 Tbsp
- additional freshly grated Parmesan cheese - 1 item
- anchovy fillets, minced - 6 item
- large head romaine lettuce, torn into bite size pieces - 1 item
How to make caesar salad:
Blend first 7 ingredients in processor or blender. Add 1 cup Parmesan cheese and blend until combined. Season to taste with salt. Place lettuce in a large bowl. Add enough dressing to season to taste. Toss well. Divide salad among plates. Sprinkle with additional cheese.Top with croutons and serve.
