Caesar salad
Ingredients/Components
- Dijon mustard - 1/4 tsp
- Parmesan cheese - 3 Tbsp
- wine vinegar - 2 Tbsp
- olive oil - 2/3 c
- juice of 1 lemon
- fresh ground pepper - 1 item
- to 2 cloves garlic - 1 item
- heads romaine lettuce - 2 item
- dashes Worcestershire sauce - 2 item
- homemade croutons - 1 item
- egg yolks optional - 2 item
- can anchovies I use rolled with capers and with some juice - 1 item
How to make caesar salad:
Process all but Parmesan, croutons and lettuce in food processor until well blended. Put dressing in a bowl. Rinse, dry and tear romaine lettuce into bite size pieces. Add lettuce to salad bowl. Sprinkle with Parmesan.Make croutons by cutting French or Italian bread into cubes, saute in butter and season with favorite Italian spices. Toss with salad.
