Caesar salad
Ingredients/Components
- salt - 1 tsp
- egg - 1 item
- grated Parmesan cheese - 1/2 c
- red wine vinegar - 2 Tbsp
- olive oil - 2/3 c
- croutons - 1 c
- fresh ground pepper - 1 tsp
- fresh lemon juice - 3 4
- clove garlic, crushed - 1 item
- Worcestershire - 1 Tbsp
- romaine lettuce, chilled, torn about 3 medium heads - 4 qt
- to 8 anchovy fillets, chopped - 6 item
How to make caesar salad:
Add garlic to oil; let stand overnight. Discard garlic. Place romaine in large salad bowl. Sprinkle with salt, pepper and Worcestershire. Coddle egg for 1 1/2 minutes; break into middle of salad. Pour lemon juice and wine vinegar over egg. Toss lightly to mix well. Add remaining ingredients, tossing after each addition. Adjust servings if necessary. Serve immediately.
