Ingredients/Components

  • head romaine lettuce - 1 item
  • croutons
  • Parmesan cheese - 1 item
  • jar anchovies optional - 1 item
  • canola oil
  • virgin olive oil - 1 c
  • anchovy paste - 2 Tbsp
  • clove garlic, crushed - 1 item
  • lemon juice - 2 Tbsp
  • Worcestershire sauce - 2 Tbsp
  • dry mustard - 2 Tbsp
  • black pepper - 1 Tbsp
  • eggs, coddled - 2 item

How to make caesar salad:

Caesar Dressing:1 c. canola oil1 c. virgin olive oil2 Tbsp. anchovy paste1 clove garlic, crushed2 Tbsp. lemon juice2 Tbsp. Worcestershire sauce2 Tbsp. dry mustard1 Tbsp. black pepper2 eggs, coddled1 c. Parmesan cheese Wash and break lettuce into bite size pieces. Wrap in paper towels and place in refrigerator until ready to use. Put lettuce in large bowl with croutons and add dressing. Mix well. Serve on individual plates and sprinkle with Parmesan cheese. Place 2 to 3 anchovies on top.

Dressing: Blend first 8 ingredients together in blender for 2 minutes. Add coddled eggs and blend for 1 minute. (To coddle: Boil water in shallow pan, then remove from stove and add whole eggs. Let cook for 1 minute; this removes bacteria.) Add Parmesan cheese and blend for 2 minutes.
