Cabbage and bacon soup
Ingredients/Components
- paprika - 2 tsp
- cloves garlic, minced - 3 item
- chicken broth - 2 c
- medium onion, thinly sliced - 1 item
- salt and pepper to taste - 1 item
- white raisins - 1/4 c
- can chopped tomatoes - 1 oz
- thick slices bacon, cut in 1-inch pieces - 8 item
- medium size cabbage, coarsely shredded - 1/2 item
How to make cabbage and bacon soup:
In Dutch oven or kettle, fry bacon until lightly brown. Add onion and garlic and cook until bacon is brown and onion is tender. Add remaining ingredients and bring to a boil. Reduce heat and simmer until cabbage is tender, covered to prevent evaporation. Allow to rest 10 to 15 minutes. Serve with croutons or cornbread squares or muffins.
